Limbache Goad LoNche - Lemon Pickle (Sweet)

This pickle is generally made in the hot sun. However, I made it my aunt's way using the pressure cooker.

Limbache Goad LoNche
लिंबाचे गोड लोणचे
Sweetened key lime pickle
7 key limes, washed and dried, cut into 8 parts
2 key limes, freshly squeezed
2" ginger, peeled & diced
2/3 cup sugar (or per taste)
3 tbsp mild chili powder
1 tbsp hot chili powder (optional)
salt to taste

1. Steam 7 key limes & ginger in the pressure cooker without adding any water in the container. You still need to add the water in the base of the pressure cooker as usual.
2. Let them cool down completely.
3. Mix remaining ingredients.
4. Keep aside for 1 day.
5. Store in a ceramic container/pot.

Note -
1. Refrigerate and use within 7 days.
