Moong sprouts Stir Fry from Gujarat
Ingredients
1 1/2 cups moong sprouts/mung bean sprouts
salt to taste
1/2 tsp coriander-cumin seed powder
Tempering
2 tsp oil
1/2 tsp mustard seeds
1/4 tsp asafoetida
1/2 tsp cumin seeds
1/2 tsp turmeric powder
1 red chili, halved
1 tsp ginger-green chili paste
Garnish
1 tbsp chopped coriander leaves/cilantro
Method
1. Heat oil. Add the ingredients for tempering.2. Add mung sprouts. Add 2 tbsp water and keep a lid on top.
3. Let it cook on low flame. Add more water if necessary.
4. Add coriander-cumin seeds powder & salt.
Note
1. I love to squeeze some fresh lemon juice while serving.

Thats a neat and simple stir fry..I made a similar one with moong sprouts too. Delicious and healthy, isn't it ??

We generally make it as a side dish to go with chapati or bhakri. but i like to eat it as a snack too!:-D
