Ullel - Cucumber Raita


Cucumber Ullel
Cucumber Raita - South Canara way
Ingredients
3 small or 1 big cucumber, peeled & diced
1 green chili, chopped
1" ginger, peeled & minced
salt to taste

Grind to a coarse paste
1/4 cup fresh coconut
2 byadgi chilies, roasted quickly in 1/2 tsp oil
1 tsp tamarind pulp
1/2 tsp mustard seeds

Tempering
1 tsp oil
1/2 tsp mustard seeds

Method
1. Mix cucumber, salt, green chilies & ginger. Keep aside.
2. Grind the masala to a coarse paste, without adding any water.
3. Stir in the ground masala in the cucumber mixture.
4. Heat oil in a small saucepan. Add mustard seeds. Let them splutter.
5. Add sizzling oil in the raita and stir. Cover.

Note -
1. Do not make this raita too much in advance. As time goes by, there will be a lot of moisture due to cucumber.

2. For the traditional flavor, use coconut oil.
