Malvani Tomato chi Amti/Saar
Tomato Curry Malvani style
Ingredients
3-4 Roma tomatoes, chopped
1 medium onion, chopped
1 tsp Malvani masala or chili powder
salt to taste


Tempering
1 tsp oil
1/2 tsp mustard seeds
1/4 tsp asafoetida
1/2 tsp turmeric powder


Grind to a fine paste
1/4 cup freshly grated coconut
1 tsp coriander seeds
4-5 black peppercorns


Method
1. Apply chili powder or malvani masala to the chopped tomatoes and keep aside.
2. Heat oil. Add all the ingredients for tempering.
3. As the mustard seeds start spluttering, add onions.
4. Saute for 4-5 minutes till onions are soft.
5. Add tomatoes & ground masala paste.
6. Stir fry for a minute and add 2 cups water.
7. Bring to boil. Add salt to taste.
8. Simmer for 7-9 minutes. Add more water as necessary.
9. Serve hot with plain rice.


Note -
1. It should have broth like consistency so add more water if necessary.
