Here's the recipe -
Modachya Matkicha Pullao
Moth sprouts pullao
Ingredients
1 cup basmati rice
1 cup moth/matki sprouts
1/2 tsp red chili powder
Tempering
1 tbsp oil
1/2 tsp cumin seeds
1 tbsp goda masala
2-3 star anise
a pinch of asafoetida
1/4 tsp turmeric powder
Garnish
1 tbsp freshly grated coconut
1 tbsp chopped cilantro/coriander leaves
Accompaniment
Lemon wedges
Ghee or
Plain yogurt
Method
1. Wash & drain basmati rice and keep aside for at least 20 minutes.
2. Heat oil. Add the ingredients for tempering.
3. Stir in rice and saute for 1 minute.
4. Add matki sprouts and carefully mix in without breaking the sprouts.
5. Add 3 cups water, salt to taste & red chili powder.6. Bring to boil. As the water comes to a rolling boil, switch the gas to low.
7. Cover with a lid and let it cook for about 15 minutes or so. Fluff the rice with a fork.
8. Garnish with coconut, cilantro.
9. Serve with lemon wedges and a dollop of ghee or yogurt.
